Crispy Air Fryer Chicken Cordon Bleu

Instructions

Gather all the ingredients for the recipe.

Place a chicken breast on a flat surface and slice it horizontally, being careful not to cut all the way through. Open the chicken like a book and place it between two sheets of plastic. Gently pound with a meat mallet until it is about 1/4-inch thick. Repeat with the other chicken breast.

Season the chicken with salt and pepper. Spread Dijon mustard on top of each breast, then add a slice of cheese, followed by two slices of ham and another slice of cheese. Roll the breasts up and secure them with toothpicks.

Prepare three bowls: one with flour, one with beaten egg, and one with a mixture of panko breadcrumbs and grated Parmesan. Preheat the air fryer to 350°F (175°C).

Dredge the chicken breasts in the flour, shaking off the excess, then dip them in the egg, letting any extra drip off. Coat the chicken in the breadcrumb mixture and place it on a plate. Lightly spray the chicken with nonstick spray. Let it sit for 5 minutes while the air fryer heats up, then arrange the chicken in a single layer in the air fryer basket.

Cook in the preheated air fryer for 10 minutes. Flip the chicken, spray any dry spots with more nonstick spray, and continue cooking for another 8 minutes or until the chicken reaches 165°F (74°C) in the center using an instant-read thermometer.
