Crispy Baked Potatoes

½ cup unsalted butter, diced, more for the dish

5 pounds red potatoes, thinly sliced

1 onion, finely chopped

6 slices bacon, chopped

salt and pepper to taste
Instructions

Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch casserole dish.

Arrange the potato slices evenly in the dish. Sprinkle the chopped onions and crispy bacon over the potatoes, and add chunks of butter on top. Cover the dish with aluminum foil.

Bake in the preheated oven for 45 minutes. Afterward, remove the foil and stir the potatoes. Switch the oven to the broiler setting and cook for an additional 5 minutes, or until the potatoes are golden and crispy. Stir occasionally for even crisping. Serve immediately.
