Crispy Beer-Battered Chicken Strips

Ingredients List
-
1 ½ pounds boneless, skinless chicken breast halves
-
1 ½ cups all-purpose flour
-
1 teaspoon baking powder
-
2 large eggs, beaten
-
½ cup cold beer
-
3 cups oil for frying
Instructions
-
Slice the chicken breasts into 1-inch wide strips and set them aside.
-
In a medium bowl, whisk together 1 cup of flour and baking powder. Gradually mix in the eggs and cold beer until the batter is smooth. Pour the remaining 1/2 cup of flour into a separate bowl.
-
Heat oil in a deep skillet or fryer to 375°F (190°C).
-
In batches, dredge the chicken strips in flour, then dip them into the beer batter. Fry them until golden brown and crispy, turning occasionally. The chicken should be cooked through and reach an internal temperature of 165°F (74°C). Remove from the oil and drain on a paper towel-lined plate.
