Crispy Fried Frog Legs

24 frog legs, skin removed

1 cup all-purpose flour

½ cup cornmeal

1 (4 ounce) packet saltine crackers, crushed

1 tablespoon ground black pepper

2 teaspoons salt

1 teaspoon minced onion

2 eggs

½ cup milk

2 cups vegetable oil for frying

1 cup peanut oil for frying
Cooking Instructions

Rinse the frog legs and pat them dry. Set aside. In a large resealable bag, combine flour, cornmeal, crushed saltines, pepper, salt, and onion powder; shake to combine. In a shallow bowl, whisk together eggs and milk.

Heat a mix of vegetable oil and peanut oil in a large skillet over medium-high heat, with the oil depth about 1/2 inch.

Dip the frog legs into the egg mixture, then coat thoroughly in the cracker crumb mix. Place the breaded legs on a plate, keeping them separate. Repeat the process with the remaining frog legs.

Carefully add the coated frog legs into the hot oil, frying in batches. Cook for 4-5 minutes on each side, or until golden and crispy. Transfer the cooked legs to a paper towel-lined plate to drain excess oil. Repeat with the remaining frog legs.
