Crispy Lemon-Roasted Chicken

Instructions
Preheat your oven to 450°F (230°C).
In a large bowl, combine the chicken, onion, lemon slices, garlic, and rosemary. Drizzle with olive oil, then season with salt and pepper. Toss everything together until evenly coated. Transfer the mixture to a baking dish, spreading it out evenly.
Place in the preheated oven and bake until the chicken is no longer pink at the bone and the juices run clear, about 45 to 50 minutes. The internal temperature should reach 165°F (74°C) when measured with an instant-read thermometer at the thickest part of the thigh, close to the bone.
