Crispy Mustard Fried Chicken

5 pounds chicken wings, separated at joints, tips discarded

2 tablespoons garlic powder

2 tablespoons onion powder

2 tablespoons ground black pepper

1 tablespoon seasoned salt

1 tablespoon monosodium glutamate (MSG, or Accent flavor enhancer) (Optional)

3 tablespoons prepared yellow mustard

3 cups all-purpose flour

1 quart oil for frying, or as needed
Instructions

Season the chicken wings on both sides with garlic powder, onion powder, pepper, seasoned salt, and MSG.

Using a basting brush, apply a thin layer of mustard to each wing. Place the flour in a plastic bag, add the chicken, and shake to coat evenly.

Heat oil in a deep fryer or large skillet to 350°F (175°C).

Fry the chicken until it is no longer pink and the juices run clear, approximately 6 minutes per side. Use an instant-read thermometer to check for a safe internal temperature of 165°F (74°C). Drain on a plate lined with paper towels and allow to cool for 5 minutes before serving.
Cook's Tip
For easier clean-up when seasoning the chicken wings, I prefer to lay them out on a large plastic bag.
