Crispy Parmesan-Crusted Roasted Cabbage Wedges

If you’ve never thought of roasting cabbage, this recipe will change your mind. Roasting at high heat brings out the vegetable's natural sweetness, while adding a crispy Parmesan crust for an irresistible savory finish. As recipe developer Renu Dhar puts it, "The combination of crispy, garlicky, and tender textures in every bite will make you fall in love with cabbage."

Evenly distribute the Parmesan mixture on one side of each cabbage wedge (about 2 tablespoons per wedge), then arrange them, paste side down, on the prepared baking sheets.

Bake in the preheated oven until the cabbage is tender-crisp and the Parmesan forms a golden brown crust on the bottom, about 16 to 18 minutes. Be sure to rotate the pans between the top and bottom racks, and from front to back, halfway through the cooking time.

Remove the cabbage from the oven and let it rest for 2 minutes. Then, use a spatula to gently lift the cabbage wedges from the baking sheets. Flip them over, cheese side up, and return to the oven to bake at 450°F (230°C) until the cabbage is tender, about 6 to 8 minutes. Serve while hot.
