Prepare all the ingredients before starting.

Place the potatoes into a large pot and cover them with water, ensuring it's at least 1 inch above the potatoes. Bring the water to a boil, then reduce the heat, cover, and let the potatoes simmer until tender, about 20 minutes. Drain the water.

Transfer the boiled potatoes to the prepared baking sheet. Using a flat-bottomed glass, gently press down on each potato to flatten it to about 1/2-inch thick, keeping the potatoes in one piece.

Brush the smashed potatoes with the remaining 1 tablespoon of olive oil. Season with 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
