Crispy SPAM Fries with Bold Spicy Garlic Sriracha Sauce

For the Sauce:

1 tablespoon sriracha sauce

1 tablespoon ketchup

1 quart vegetable oil for frying

2 (12 ounce) cans fully cooked luncheon meat (such as SPAM®), sliced into fries
Instructions for Preparation
Blend garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha, and ketchup; pulse until the sauce is fully combined. Transfer the sauce to a bowl, cover with plastic wrap, and chill in the refrigerator until cold.
Heat oil in a deep fryer or large pot to 350°F (175°C). Rinse the SPAM fries with cold water and pat them dry.
Cook the fries in batches in the hot oil until they are golden brown and crispy on the outside, yet tender and juicy inside, about 4 to 6 minutes. Remove from the oil and place on a paper towel-lined plate. Serve the fries with the chilled dipping sauce.

Chef’s Tip
For a more robust flavor, use a mortar and pestle to prepare the sauce.
If you like extra heat, try adding cayenne pepper or more sriracha, or use a spicy jalapeno or habanero ketchup for an extra kick.
