1 large sweet potato, peeled and grated

Instructions

Preheat your oven to 200°F (95°C). Line a baking sheet with paper towels to drain the cooked latkes.

In a bowl, prepare lightly-salted water and rinse the grated sweet potatoes. Drain the sweet potato shreds in a sieve, then press them dry with a cloth or paper towels. Place the dried sweet potato into a bowl. Next, squeeze the excess moisture from the grated onion and add it to the bowl with the sweet potatoes. Stir in the eggs and pepper until everything is well mixed.

Heat olive oil in a non-stick skillet over medium heat. For each latke, scoop about 1 heaping tablespoon of the potato mixture into the hot oil. Flatten each scoop with a fork, and fry for 5 to 8 minutes or until golden and crispy on the bottom. Flip the latkes and cook on the other side, then sprinkle with salt. As you finish each batch, set the latkes on the prepared baking sheet in the warm oven to keep them hot. Stir the mixture between batches before frying the next set. Serve the latkes hot with applesauce and yogurt on the side.
