Crockpot Pork Loin with Sauerkraut

2 tablespoons spicy horseradish mustard

1 (4 pound) boneless pork loin roast

1 onion, chopped

1 Granny Smith apple, chopped

1 (16 ounce) can sauerkraut with juice

salt and pepper to taste

1 ½ cups chicken broth
Instructions

Coat the pork loin with horseradish mustard. Place the onions and apples in the bottom of the slow cooker, then set the pork loin on top. Add sauerkraut with its juices, season with salt and pepper, and pour in the chicken broth.

Cover the slow cooker and cook on Low for 6 to 8 hours, or until the pork is fork-tender. An instant-read thermometer should read at least 145°F (63°C) when inserted into the center of the meat.
