2 cups chicken broth

Instructions

In a large skillet, heat oil over medium. Add onions and garlic, cooking while stirring until softened, around 2 minutes. Then, add quinoa and cook, adding extra oil if needed. Stir until the quinoa is lightly golden, about 5 minutes.

Pour in the broth and bring to a boil. Reduce the heat and stir in the curry and chili powder. Cover and let it simmer until the liquid is absorbed and the quinoa is tender, roughly 25 minutes. Season with salt and pepper to your liking.
