Instructions
Preheat the oven to 350°F (175°C).
Place the rice in a casserole dish, then season with chili powder, salt, cumin, black pepper, cayenne, and oregano. Drizzle in olive oil and mix until the rice is evenly coated. Add beans, salsa, and broth; stir until fully combined. Cover tightly with heavy-duty aluminum foil.
Bake in the preheated oven for about 1 hour and 10 minutes, or until the rice is tender. Remove the foil, taste, and adjust seasoning as needed. Fluff the rice with a fork and serve hot.
Chef's Tips
You can swap the basmati rice for any long-grain white rice, paprika for chili powder, melted butter for olive oil, water for chicken broth, and any canned beans — pinto or black beans work great.
After removing the dish from the oven, ensure the rice is fully cooked before fluffing with a fork. If not, re-cover and bake longer until tender.
