Delicious Chicken and Pasta in a Rich Pesto Cream Sauce

Pesto Sauce:

6 boneless, skinless chicken breasts, cut into strips

1 tablespoon sugar

½ (8 ounce) jar oil-packed sun-dried tomatoes, drained and sliced

⅓ cup pine nuts

½ cup white wine
-
1 cup heavy cream

salt to taste
Instructions

Combine basil, garlic, Parmesan, pine nuts, and sun-dried tomatoes in a food processor. Slowly drizzle in olive oil while pulsing until the mixture becomes smooth and creamy.

In a separate bowl, mix together chicken broth, 1 cup of white wine, dried basil, oregano, and minced garlic. Add the chicken pieces and stir to coat.

Bring a large pot of salted water to a boil. Add pasta and cook for about 8 minutes, or until just al dente. Drain and rinse with cold water, then toss with 2 tablespoons of olive oil. Set aside.

Heat 3 tablespoons of olive oil in a skillet over medium heat. Add onions and sprinkle with sugar. Cook until softened and translucent. Stir in sun-dried tomatoes and pine nuts, cooking for another 3 minutes. Add the chicken and marinade, then pour in 1/2 cup of white wine. Simmer the chicken for about 8 minutes, stirring occasionally.

Add the cooked pasta and pesto sauce to the skillet. Stir in cream and cook until the sauce thickens. Season with salt and freshly ground black pepper, and serve with freshly grated Parmesan cheese.
