Instructions

Place the cinnamon sticks, allspice berries, and cloves in the center of a square of cheesecloth (about 8 inches). Gather the edges and tie with kitchen twine to form a sachet. Add the sachet to a large saucepan along with the cranberries and orange juice. Bring to a boil over high heat, cooking for about 10 minutes until the cranberries start to pop.

Stir in the apples, pears, both sugars, and let it return to a boil. Reduce the heat to medium-low and simmer for 25 minutes, or until the apples and pears soften slightly. Remove the spice sachet, then transfer the sauce into a bowl, cover, and refrigerate overnight. Serve chilled.
