4 skinless, boneless chicken breasts, cut into 1-inch pieces

Blend tomatoes, yogurt, garlic, and ginger together until smooth.

In a large skillet, heat oil over medium heat. Add onions and sauté for 3-4 minutes until soft. Stir in curry paste and cook for 1 more minute until fragrant. Add the blended tomato mixture and chicken, and mix well. Season with salt and pepper, then remove from heat.

In a separate bowl, combine water and flour, then stir the mixture into the chicken in the skillet. Return to heat and bring to a boil while stirring constantly, about 5 minutes. Lower the heat, cover, and simmer for an additional 15 minutes, or until the sauce thickens. Garnish with cilantro and serve hot.
