Instructions
Prepare all the ingredients before you start cooking.

Heat peanut oil in a large pan over medium heat. Sauté the onion in the hot oil, stirring occasionally, until soft and translucent, about 5 minutes. Remove from heat and let cool for a couple of minutes.

Add garlic, turmeric, ginger, cumin, paprika, and chili powder to the onions in the pan. Stir over low heat to release the flavors of the spices, about 30 seconds. Then mix in tomatoes, coconut milk, and salt. Bring to a boil for 1 minute, reduce the heat, and let it simmer for 10 minutes, stirring occasionally.
