Prepare the battered chicken: In a bowl, combine flour, 2 tablespoons of cornstarch, baking soda, and baking powder. Add low-sodium soy sauce, sherry, 2 tablespoons of water, vegetable oil, and a splash of sesame oil. Stir until smooth. Coat the chicken in the batter, cover, and chill for 20 minutes.

Next, prepare the sauce: In a saucepan, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil over high heat. In a separate bowl, dissolve 1/4 cup cornstarch into 1/2 cup of water, then stir this mixture into the boiling sauce. Let it simmer for about 2 minutes until thickened and clear. Reduce the heat and keep warm.

Heat olive oil in a deep fryer or large pot to 375°F (190°C).
Gently lower the battered chicken pieces into the hot oil, cooking in batches. Fry for 3 to 4 minutes until golden brown and floating to the surface. Remove and place on a paper towel-lined plate to drain excess oil.
