Diablo-Inspired Pork Tenderloin
Ingredients List
-
1 (1 pound) whole pork tenderloin
-
salt and freshly ground black pepper to taste
-
2 teaspoons vegetable oil
-
½ cup chicken broth
-
2 tablespoons heavy cream
-
1 tablespoon extra-hot prepared horseradish
-
1 tablespoon Dijon mustard
-
¼ teaspoon cayenne pepper
-
1 tablespoon cold unsalted butter
-
1 teaspoon chopped fresh chives
Cooking Instructions
Preheat your oven to 375°F (190°C). Season the pork tenderloin with salt and freshly ground black pepper.
Heat oil in an oven-safe skillet over high heat. Add the pork and cook for 3 to 4 minutes until browned on one side. Flip the pork and transfer the skillet to the preheated oven. Roast for 20 to 25 minutes until the pork is browned and slightly pink in the center. The internal temperature should reach 145°F (63°C) when measured with an instant-read thermometer. Remove the pork from the skillet and set aside on a plate.
Remove any excess oil from the skillet. Place the skillet over medium-high heat and pour in the chicken broth. Bring to a boil, scraping the browned bits from the skillet’s bottom. Stir in cream, horseradish, Dijon mustard, and cayenne pepper. Continue cooking until the sauce thickens, about 3 to 4 minutes. Remove from heat and whisk in the cold butter, followed by the chives.
Slice the pork into 1/2-inch pieces and drizzle with the sauce.
