1 quart vegetable oil for frying, or as needed

¾ cup milk

1 egg

2 tablespoons minced onion

1 cup baking mix

1 cup cornmeal

1 teaspoon salt
Instructions

Heat oil in a deep-fryer or large pan to 350°F (175°C).

In a bowl, whisk together milk, egg, and onion. Add pancake mix, cornmeal, and salt, mixing until smooth.

Use a small ice cream scoop to form batter into balls the size of ping pong balls. Carefully drop about 5 scoops into the hot oil at a time. Fry for 5-6 minutes until golden brown, then use a slotted spoon to remove and drain on paper towels. Continue with the remaining batter.
