Easy Slow-Cooked Korean Beef Soft Tacos

1 (3 pound) beef chuck roast, trimmed

1 (1 inch) piece fresh ginger root, peeled and grated

2 tablespoons seasoned rice vinegar

1 tablespoon sesame oil

16 (6 inch) corn tortillas (Optional)
Cooking Instructions
Transfer the cooked roast to a cutting board and use two forks to shred the meat. Return the shredded meat to the slow cooker and stir it into the flavorful juices.
Serve the shredded beef with warm corn tortillas.
Chef’s Tip
Sometimes, I replace the ginger and diced jalapeño with 2 tablespoons of garlic-chile paste for an extra kick. You can adjust the heat level by adding more paste, depending on your preference. We love a good amount of spice!
For a delicious topping, mix a bag of shredded coleslaw with thinly sliced cucumbers and carrots. Season the slaw with 1 tablespoon of soy sauce, 2 tablespoons of rice vinegar, and a pinch of salt and pepper.
