Easy Stir-Fried Rice

3 large eggs, lightly beaten

1 (16 ounce) package frozen stir-fry vegetables, thawed

1 (14.5 ounce) can chicken broth

2 tablespoons soy sauce

2 cups Minute® White Rice, uncooked
Instructions

Heat oil in a large skillet over medium heat. Pour in the beaten eggs and cook, stirring occasionally, until fully set. Transfer the scrambled eggs to a plate and set them aside.

In the same skillet, add vegetables, broth, and soy sauce. Bring the mixture to a boil, then stir in the rice. Cover the skillet, remove from heat, and let it sit for 5 minutes.

Fold the scrambled eggs into the rice mixture and serve hot.
Cooking Tip
For an added burst of flavor, try incorporating sesame oil, five-spice powder, or a dash of Sriracha sauce.
