Fast and Flavorful Baby Back Ribs

Ingredients Needed

1 cup mesquite chips, soaked

1 (2 pound) slab baby back pork ribs

1 teaspoon salt

1 teaspoon freshly ground pepper

1 teaspoon Hungarian paprika

1 teaspoon ancho chile powder

½ teaspoon ground thyme

1 cup barbeque sauce
Instructions

Prepare a charcoal grill for indirect cooking by placing a mound of coals on one side and leaving the other side clear. Once the coals are hot, scatter mesquite wood chips on top for added smoke flavor.

Peel the membrane from the ribs. In a small bowl, mix salt, pepper, paprika, chili powder, and thyme. Rub the mixture generously onto the ribs. Cut the rack of ribs in half for easier handling.

Place the ribs on the cooler side of the grill, with the lid closed. Cook for 20 minutes, then baste with barbecue sauce. Close the lid again and continue cooking for an additional 30 minutes.
