Season both sides of the pork chops generously with garlic salt, ensuring a full coverage without overdoing it.

Heat some olive oil or your choice of cooking oil in a skillet. Add the pork chops and sprinkle fennel seeds over them—aim for 10 to 15 fennel seeds per chop. Allow the first side to brown, then flip. After both sides are browned, flip the chops again.

Pour wine into the pan, cover, and reduce the heat. Let the pork chops simmer for 10 minutes, then flip them again. Cover and continue simmering for another 10 minutes. Keep an eye on the wine level to prevent burning; add more wine or water as needed.
