Fiery and flavorful Indian Dahl

1 cup red lentils

2 tablespoons ginger root, minced

1 teaspoon mustard seed

2 tablespoons chopped fresh cilantro

4 tomatoes, chopped

3 onions, chopped

3 jalapeno peppers, seeded and minced

1 tablespoon ground cumin

1 tablespoon ground coriander seed

6 cloves garlic, minced

2 tablespoons olive oil

1 cup water

salt to taste
Cooking Instructions

Begin by cooking the lentils, either by boiling them or using a pressure cooker, until they are soft and tender. (Pressure cooking will save time.)

Heat oil in a skillet and add mustard seeds. Once the mustard seeds start to pop, toss in the onions, ginger, jalapenos, and garlic. Sauté everything until the onions and garlic turn golden. Add ground coriander and cumin, followed by chopped tomatoes. Stir and cook until the tomatoes are fully softened.

Pour in water and let it boil for about 6 minutes. Add the cooked lentils, stirring thoroughly. Season with salt to taste, and mix in chopped cilantro. Remove from heat and serve the soup hot.
