Flavorful Baked Jerk Chicken

1 (2 to 3 pound) whole chicken, cut into pieces

¼ cup vegetable oil
Instructions

Combine salt, allspice, brown sugar, onion powder, garlic, nutmeg, black pepper, ginger, cayenne, cinnamon, and thyme in a large bowl. Add chicken pieces and toss to coat evenly. Cover and refrigerate for 2 to 4 hours to marinate.

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with vegetable oil.

Arrange the marinated chicken pieces in the baking dish, skin-side up. Roast in the preheated oven for 1 hour 20 minutes, or until the juices run clear and the chicken is fully cooked. An instant-read thermometer inserted near the bone should read 165°F (74°C).

Switch the oven to broil and cook for an additional 2 to 5 minutes to crisp the skin.
