Instructions
In a saucepan, combine the chicken broth with the onion and garlic. Bring the mixture to a boil and let it cook until the liquid reduces by half, roughly 10 minutes. Add the white wine, bring back to a boil, and reduce again by half, around another 10 minutes. Incorporate the mushrooms, rosemary, and sage; let it simmer until the mushrooms are tender and have released their juices, about 15 minutes. Stir in the cream, butter, lemon, and capers, then lower the heat. Simmer the sauce until it thickens, about 10 minutes (total cook time: 45 minutes).
Preheat the oven to 350°F (175°C).
Pour the cornstarch into a shallow dish. Dredge the chicken thighs in the cornstarch, making sure they are evenly coated on all sides. Shake off any excess. Heat olive oil in a skillet over medium heat and cook the chicken thighs until golden and crispy, about 8 minutes per side. Transfer the chicken thighs to a 9x9-inch baking dish and pour the sauce over them.
Place the dish in the preheated oven and bake until the sauce is bubbling and the chicken is fully cooked through, approximately 15 minutes. The internal temperature of the chicken should reach 165°F (74°C) when tested with a meat thermometer.
