Ingredients Needed

1 large head cabbage, shredded

1 green bell pepper, finely chopped

1 small small onion, finely chopped

2 carrots, shredded

2 cups boiling water

2 teaspoons salt

1 ½ cups white sugar

1 cup water

¾ cup cider vinegar

2 teaspoons celery seed
Instructions

In a large bowl, combine shredded cabbage, chopped green bell pepper, onion, and grated carrots. In a separate bowl, dissolve salt in boiling water and pour over the vegetable mixture. Let it sit for about an hour to allow the salt to draw out moisture from the veggies, then drain thoroughly.

In a saucepan, mix together sugar, water, cider vinegar, and celery seed. Bring to a boil, stirring occasionally until the sugar dissolves (about 1 minute). Remove from heat and let it cool completely.

Pour the cooled sugar-vinegar mixture over the drained veggies and toss until everything is well-coated. Pack the slaw into resealable plastic bags, removing excess air, sealing the bags, and freezing until ready to use.
How to Serve:
When you're ready to serve, simply thaw the slaw in the fridge, drain off any excess liquid, and stir in mayonnaise to your desired creaminess.
