Heat a large pot over medium-high heat. Add the ground beef and sausage, breaking them up as they cook. Stir occasionally until the meat is browned, then drain any excess fat.

Add chili beans, spicy chili beans, diced tomatoes, tomato paste, celery, onion, bell peppers, chile peppers, bacon bits, bouillon, beer, 1/4 cup chili powder, garlic, Worcestershire sauce, oregano, cumin, hot sauce, basil, cayenne, paprika, sugar, 1 teaspoon salt, and 1 teaspoon black pepper to the pot. Stir well, cover, and let simmer on low heat for at least 2 hours, stirring occasionally.

Taste the chili and adjust seasoning with more salt, pepper, or chili powder if needed. The longer it simmers, the richer the flavor. Remove from heat and serve, or allow it to cool, refrigerate, and reheat the next day for even better taste.

To serve, ladle the hot chili into bowls and garnish with corn chips and shredded Cheddar cheese. Dig in and enjoy!
