Garlic and Herb Roasted Red Potatoes with Asparagus

1 ½ pounds red potatoes, cut into chunks

2 tablespoons extra-virgin olive oil, divided

8 cloves garlic, thinly sliced

4 teaspoons dried rosemary

4 teaspoons dried thyme

2 teaspoons kosher salt, divided

1 bunch fresh asparagus, trimmed and cut into 1 inch pieces

Cooking Instructions

Preheat your oven to 425°F (220°C).

In a large baking dish, toss the potatoes with 1 tablespoon of oil, garlic, rosemary, thyme, and 1 teaspoon of salt. Cover the dish with aluminum foil.

Place the dish in the preheated oven and bake for 20 minutes.

Add the asparagus, the remaining 1 tablespoon of oil, and another teaspoon of salt. Cover and continue baking until the potatoes are tender, about 15 more minutes.

Raise the oven temperature to 450°F (230°C), remove the foil, and cook for an additional 5 to 10 minutes, until the potatoes are lightly browned. Season with freshly ground black pepper before serving.
