Georgia Pot Roast
Ingredients List

1 1/2 to 3 pounds beef chuck roast

1 (1 ounce) packet au jus gravy

1 (1 ounce) packet ranch seasoning

1 (16 ounce) jar pickled onions, such as Mt. Olive Simply Vidalia Pickled Vidalia® Onion Strips

4 cups low sodium beef stock, or as needed

1 tablespoon butter, at room temperature

1 tablespoon all-purpose flour
Instructions
Place the chuck roast directly into your slow cooker (no need to brown it beforehand). Sprinkle the au jus seasoning and ranch dressing mix over the roast. Finally, pour the pickled Vidalia onions over the top of the roast.
Place the lid on the slow cooker and cook on High for 4 to 6 hours, or on Low for 6 to 8 hours, until the roast is tender and cooked through.
If the roast starts to dry out during cooking, add a little beef stock to maintain moisture halfway through the process.
Once the roast is perfectly tender and easily pulls apart, remove it from the cooker, shred the meat, and return it to the cooking liquid.
To thicken the gravy, mix butter and flour into a paste in a bowl, then stir the mixture into the beef and cooking liquid. Let it cook uncovered for another 30 minutes to achieve a thicker sauce.
