Gnocchi with Tomato Sauce and Mozzarella Cheese

1 ½ tablespoons extra-virgin olive oil

½ onion, finely chopped

1 ½ (14.5 ounce) cans passata (crushed tomatoes)

1 (18 ounce) package potato gnocchi

2 tablespoons grated Parmesan cheese

1 (4 ounce) ball fresh mozzarella, cubed

4 fresh basil leaves
Instructions

Heat olive oil in a saucepan over medium heat. Sauté the onion until it softens and turns translucent, about 5 minutes. Add the passata and season with salt. Let it simmer on low heat while you prepare the gnocchi.

Bring a large pot of salted water to a boil. Cook the gnocchi in the water until they rise to the surface, about 2 to 4 minutes. Drain the gnocchi.

Position an oven rack about 6 inches from the broiler and preheat the oven.

Pour a ladleful of tomato sauce into the bottom of a baking dish. Add the cooked gnocchi, pour over the remaining sauce, and sprinkle with Parmesan cheese. Toss everything together. Arrange the mozzarella cubes evenly on top.

Place the baking dish under the broiler and cook until the mozzarella is melted and the sauce has slightly thickened, 5 to 10 minutes. Remove from the oven and garnish with fresh basil leaves before serving.
