Goat Cheese and Balsamic Stuffed Chicken Breasts

1 shallot, finely diced

1 cup balsamic vinegar

2 skinless, boneless chicken breast halves

2 ounces goat cheese, divided

Preheat the oven to 350°F (175°C).

Heat olive oil in a skillet over medium heat. Cook shallots, stirring occasionally, until softened and translucent, about 5 minutes. Add balsamic vinegar and bring to a boil. Reduce the heat and simmer for about 10 minutes, until the vinegar mixture has reduced by half. Stir frequently.

Slice each chicken breast horizontally, leaving about half an inch intact on one side. Open them up like a book.

Spread goat cheese evenly on one side of each chicken breast and drizzle 1/3 of the balsamic reduction over the cheese. Fold the chicken back together and secure with toothpicks. Place the stuffed chicken breasts in a baking dish and drizzle the remaining balsamic reduction on top.

Bake in the preheated oven for 30 to 35 minutes, or until the chicken is fully cooked, the filling is hot, and the juices run clear. An instant-read thermometer inserted into the center of the stuffed chicken should read at least 160°F (70°C).
