Grandma Maggio's Classic Spaghetti Sauce

2 tablespoons olive oil

1 onion, chopped

1 whole head garlic, peeled and chopped

2 cups sliced fresh mushrooms

½ cup chopped fresh basil leaves, or to taste

1 (28 ounce) can whole peeled tomatoes

1 (15 ounce) can tomato sauce

1 (6 ounce) can tomato paste

¾ cup Merlot wine

2 teaspoons salt

1 teaspoon ground black pepper

2 teaspoons dried oregano

¼ cup white sugar
Cooking Instructions

Heat olive oil in a large pot over medium-low heat. Sauté the onions and garlic until soft and translucent, about 6 to 7 minutes. Add the mushrooms and basil, and continue cooking, stirring occasionally, until the mushrooms are tender and have released their juices, roughly 10 minutes.

Add the whole peeled tomatoes to the pot, bring to a boil, and break them up with a spoon as you stir. Pour in the tomato sauce, crushing any large tomato pieces remaining, and bring to a simmer. Let the sauce simmer for about 15 minutes until it thickens slightly and bubbles gently.

Stir in the tomato paste, then fill the empty paste can with Merlot wine, swirling it to loosen any paste clinging to the sides. Pour the wine into the sauce, stirring to incorporate. Return to a simmer, then season with salt, pepper, dried oregano, and sugar. Continue simmering for another 3 minutes until everything is well blended and heated through.
