Grandma's Pork Chop Supper

4 pork chops

3 medium potatoes, peeled and cut into thick slices

In a large, deep skillet, cook the bacon over medium-high heat, turning occasionally, until the bacon is fully cooked but not crispy, about 6 minutes. Remove the bacon and place it on a paper towel-lined plate, leaving the bacon drippings in the skillet.

In the same skillet, sear the pork chops in the reserved bacon grease over medium-high heat, browning them for 2 to 3 minutes per side.

While the pork chops are searing, chop the cooked bacon into small pieces.

Add the sliced potatoes and onions to the skillet, along with the chopped bacon. Pour in the water, cover, and bring it to a boil over medium heat. Reduce the heat and simmer for about 30 minutes, or until the potatoes are tender. Season with salt and pepper to taste.
