Ingredients List

½ cup mayonnaise

4 cloves garlic, minced

1 cup crumbled feta cheese, divided

1 (12 inch) pre-baked Italian pizza crust

½ cup oil-packed sun-dried tomatoes, coarsely chopped

1 tablespoon oil from the sun-dried tomatoes

¼ cup pitted kalamata olives, coarsely chopped

1 teaspoon dried oregano

2 cups baby spinach leaves

½ small red onion, halved and thinly sliced
Instructions

Preheat the oven to 450°F, positioning the rack at the lowest level. In a small bowl, combine mayonnaise, garlic, and half a cup of feta cheese. Place the pizza dough on a baking sheet, spread the mayonnaise mixture over the dough, and top with tomatoes, olives, and oregano. Bake for approximately 10 minutes, until hot and crisp.

In a separate bowl, toss the spinach and onion with 1 tablespoon of sun-dried tomato oil. Once the pizza is out of the oven, add the spinach mixture and the remaining half-cup of feta cheese. Return the pizza to the oven for about 2 more minutes, or until the cheese has melted. Slice into 6 pieces and serve.
