Grilled BBQ Turkey

1 (15 pound) whole turkey, neck and giblets removed

1 cup butter, softened

¼ cup chicken soup base

5 medium apples, cored and cut into wedges

3 sweet onions, peeled and cut into wedges

1 cup butter, cut into cubes

2 tablespoons minced garlic, or to taste

1 (750 milliliter) bottle dry white wine
Instructions

Preheat your gas grill to a low heat setting.

Coat the turkey generously with softened butter, inside and out, and then repeat the process with chicken base.

In a large bowl, combine apples, onions, butter cubes, and garlic. Stuff the turkey with this mixture, then place it in a disposable aluminum roasting pan. Fold the turkey skin over the neck area to seal it. Flip the turkey over and pour wine into the opening until the turkey is filled or the bottle is empty.

Flip the turkey so the breast side is up. Insert a pop-up timer or heat-resistant thermometer into the breast. Loosely cover the pan with aluminum foil.

Place the pan on the preheated grill, close the lid, and roast until the internal temperature of the breast reaches 170°F (75°C) and the thigh reads 180°F (80°C), which should take about 4 hours depending on grill temperature.

About 10 minutes before the turkey reaches the correct temperature, remove the foil to allow the skin to brown. If it starts to darken too much, replace the foil.

Take the turkey off the grill and let it rest for at least 20 minutes before carving.
