Grilled Chicken and Sesame Soba Noodle Salad

Instructions
In a large bowl, whisk together rice vinegar, 1 tablespoon of vegetable oil, sesame oil, brown sugar, soy sauce, and grated ginger until the dressing is well blended.
Bring a large pot of water to a boil. Add the soba noodles and stir. Once the water returns to a boil, cook the noodles for 4 to 5 minutes until tender. Drain the noodles in a colander and rinse under cold running water for about 1 minute to cool them down.
Heat 2 teaspoons of vegetable oil in a skillet over medium heat. Add chicken breast pieces and cook until fully cooked through and juices run clear, about 2 to 4 minutes. Stir in garlic, salt, and pepper, and cook until fragrant, about 1 minute more.
In a large bowl, toss the soba noodles, cooked chicken, celery, carrots, red pepper, cilantro, green onions, and sesame seeds with the dressing until well combined.

I prefer using yamaimo soba, a type of buckwheat soba noodles that incorporates yamaimo, a Japanese mountain yam, for added texture and flavor.
