Grilled Chicken Satay with Peanut Dipping Sauce

1 1/4 cup unsweetened coconut milk, divided

5 teaspoons yellow curry powder, divided

1 pound skinless, boneless chicken breasts, cut into strips

½ cup chicken broth

¼ cup creamy peanut butter

1 tablespoon lime juice
Instructions
In a bowl, mix together 1/2 cup of coconut milk, 2 teaspoons of curry powder, 1 teaspoon of sugar, 1 teaspoon of fish sauce, and granulated garlic. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 2 hours to marinate.
Remove the chicken from the marinade, discarding any excess liquid. Skewer the marinated chicken pieces onto the skewers.
In a large skillet, heat olive oil over medium-high heat. Cook the chicken skewers, turning occasionally, until they are golden brown and cooked through, about 3 to 4 minutes per side.
In a small saucepan, bring the remaining 3/4 cup coconut milk to a simmer over medium heat. Stir in the remaining 3 teaspoons of curry powder and let it simmer for 4 minutes. Add chicken broth, peanut butter, lime juice, the remaining 3 teaspoons of sugar, and the last 3 teaspoons of fish sauce. Simmer for 1 more minute. Serve this flavorful dipping sauce alongside the chicken skewers.
