Preheat your outdoor grill to medium-high heat.

In a bowl, mix vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme. Set the mixture aside.

Lay out four 12x12-inch squares of aluminum foil. Place one chicken breast in the center of each square, then top with potatoes, onions, bell peppers, and mushrooms. Spoon a quarter of the sauce over each, then fold the foil around the ingredients to create sealed packets.

Grill the foil packets on the preheated grill for 30 to 40 minutes, until the chicken is fully cooked and tender. Use an instant-read thermometer to ensure the chicken reaches at least 165°F (74°C) in the center.
