Grilled Greek-Style Chicken

6 chicken leg quarters

Instructions
In a large bowl, whisk together garlic, oregano, red pepper flakes, black pepper, lemon juice, olive oil, and vinegar until well combined.
Make two shallow slashes on the skin side of the chicken thighs, down to the bone, and one in the leg section of each leg quarter. This helps the marinade penetrate and speeds up cooking on the grill. Generously season both sides of the chicken with kosher salt. Place the chicken in the marinade bowl, ensuring it's well-coated on all sides. Cover and refrigerate for 4 to 12 hours to marinate.
Transfer the marinated chicken to a paper towel-lined baking sheet to allow any excess marinade to drain off.
Place the chicken leg quarters on the grill, skin side down, over indirect heat (avoid high direct heat to ensure even cooking and prevent the skin from burning). Grill for 6-7 minutes, then flip the chicken and cook for another 6-7 minutes. Continue turning and cooking until the internal temperature reaches 165°F (74°C), about 8 to 10 more minutes. Serve with fresh lemon wedges.
