Grilled Peanut Butter Chicken

1 tablespoon fresh lime juice

2 teaspoons soy sauce

1 clove garlic, chopped

⅓ teaspoon curry powder

1 pinch ground cayenne pepper

4 skinless, boneless chicken breast halves
Cooking Instructions

Preheat your grill to medium heat and lightly grease the grill grates.

In a bowl, combine peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper.

Place the chicken on the hot grill and brush half of the sauce over the chicken. Grill for 6 to 8 minutes, then flip the chicken and brush with the remaining sauce. Continue cooking for another 6 to 8 minutes, or until the chicken is no longer pink in the center and the juices run clear. An instant-read thermometer should read 165°F (74°C) when inserted into the center of the chicken.
