Grilled Pork Chops with Balsamic-Glazed Pears

6 pork loin chops, 1/2 inch thick

2 Vidalia onions, each cut into 8 wedges

2 pears, cored and each cut into 8 wedges

Cooking Instructions
In a large bowl, combine water, kosher salt, and sugar to create a brine. Submerge the pork chops in the brine and let them marinate for up to one hour. Afterward, discard the brine, and pat the pork chops dry with paper towels.
In a shallow dish, combine olive oil, garlic, and rosemary. Add the pork chops, turning them to coat evenly. Cover the dish and refrigerate for 1 to 2 hours to marinate.
Pour balsamic vinegar into a small saucepan. Bring to a boil and simmer until it has reduced by half, about 10 minutes. Once cooled, the vinegar should have a syrupy consistency.
In a large skillet, melt butter and olive oil over medium-high heat. Add onions and pears, searing them quickly while keeping the pear wedges intact. Once browned, reduce the heat to low and cook for about 7 minutes until tender. Stir in the reduced balsamic vinegar and a pinch of salt. You can prepare this step hours before grilling.
Preheat the grill to medium-high heat.
Grill the pears on the cooler side of the grill (in the skillet), while placing the pork chops on the hot section. Cook the pork chops for about 3 minutes per side, or until they reach your preferred level of doneness. Transfer to a plate, cover with foil, and let rest for a few minutes. Uncover, spoon the pear-onion sauce over the chops, and serve.
