Grilled Pork Tenderloin with a Fruity Glaze

⅓ cup packed brown sugar

⅓ cup plum jam

¾ cup black cherry soda

1 (1 pound) pork tenderloin
Instructions

In a small saucepan, combine soy sauce, brown sugar, and plum jam over low heat, stirring until the sugar dissolves. Set aside 1/4 cup of the sauce for basting during grilling. Mix the remaining sauce with fruit soda in a large resealable bag; add the pork tenderloin, seal the bag, and refrigerate for at least 4 hours, or overnight for best results.

Preheat the grill to medium heat.

Lightly oil the grill grates, then discard the marinade. Grill the tenderloin for 15 to 20 minutes, or until an instant-read thermometer inserted into the center reads 145°F (63°C).

Remove the pork from the grill and let it rest for 5 minutes before slicing it into 1/4-inch thick medallions.
