Grilled Vegetable Skewers
Ingredients Needed

1 fresh pineapple, cut into chunks

2 medium zucchinis, cut into 1-inch slices

2 medium yellow squash, cut into 1-inch slices

½ pound whole fresh mushrooms

1 medium red onion, cut into chunks

12 cherry tomatoes
-
1 medium red bell pepper, cut into chunks

8 bamboo skewers, soaked in water for 20 minutes

⅓ cup olive oil
-
1 ½ teaspoons dried basil
-
¾ teaspoon dried oregano
-
½ teaspoon salt
-
⅛ teaspoon ground black pepper
Instructions
Prepare all the ingredients in advance.

Preheat the grill to medium heat and lightly grease the grate. Skewer chunks of pineapple, slices of zucchini and yellow squash, mushrooms, onion pieces, tomatoes, and bell pepper chunks in alternating layers.

In a bowl, whisk together olive oil, basil, oregano, salt, and black pepper; brush some of this mixture over the vegetables.

Grill the skewers on the preheated grill, cooking until the vegetables are soft. Turn and baste with the remaining olive oil mixture every few minutes, cooking for 10 to 15 minutes.
