1 pound fresh green beans, trimmed and cut into 1 inch pieces

¼ cup vegetable oil

4 cloves garlic, finely chopped

1 tablespoon black mustard seed

1 dried red chile pepper, crushed

1 teaspoon salt

½ teaspoon white sugar

ground black pepper to taste
Instructions
Bring a large pot of water to a boil. Blanch the green beans in the boiling water for 3 to 4 minutes, then drain and rinse under cold water. Drain again and pat dry with a towel.
Heat oil in a large pan over medium heat. Add garlic and mustard seeds, sautéing until golden brown, about 1 to 2 minutes. Mix in the chile pepper, then add the beans, salt, and sugar. Stir and cook until the beans are tender, approximately 8 minutes. Season with pepper before serving.
