For the Sauce:

1 (8 ounce) can pineapple chunks, juice reserved

¼ cup brown sugar

2 tablespoons cornstarch

¼ cup white vinegar

1 tablespoon soy sauce

1 green bell pepper, chopped

Prepare the meatballs: In a large bowl, combine ground beef, ginger, garlic powder, and black pepper. Mix well, then shape the mixture into 1 1/2-inch balls.

Brown the meatballs: Heat a large skillet over medium-high heat. Cook the meatballs, turning occasionally, until golden brown, about 10 minutes.

Make the sauce: While the meatballs are cooking, pour pineapple juice into a measuring cup, reserving the pineapple chunks. Add enough water to the juice to total 1 cup. In a separate bowl, combine brown sugar and cornstarch.

Combine the sauce: Remove the meatballs and set aside. In the same skillet, add the pineapple juice mixture, brown sugar, vinegar, and soy sauce. Stir and bring to a boil. Simmer for 2-3 minutes until the sauce thickens.

Finish the dish: Return the meatballs to the skillet. Add the pineapple chunks and green bell pepper. Let simmer until the meatballs are cooked through, about 10 minutes. Use a thermometer to ensure the meatballs reach an internal temperature of 160°F (71°C).
