Healthy Brown Rice Breakfast Porridge

1 cup 2% low-fat milk

2 tablespoons dried blueberries

1 tablespoon honey

1 pinch cinnamon

1 tablespoon unsalted butter

¼ teaspoon vanilla extract
Cooking Instructions

In a small saucepan, combine cooked brown rice, milk, dried blueberries, honey, and cinnamon. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.

In a separate bowl, whisk an egg. Slowly add the hot rice mixture, one tablespoon at a time, to the egg to temper it, until about 6 tablespoons are incorporated. Stir the tempered egg, butter, and vanilla into the rice mixture, continuing to cook over low heat for 1 to 2 minutes until thickened.
