Hearty Black Bean Breakfast Bowl

4 eggs, beaten

1 (15 ounce) can black beans, drained and rinsed

1 avocado, peeled and sliced

¼ cup salsa

salt and ground black pepper to taste
Instructions

Heat olive oil in a small pan over medium heat. Crack the eggs into the pan and scramble until fully cooked, about 3 to 5 minutes.

Place black beans in a microwave-safe bowl. Microwave on high for about 1 minute, until heated through. Split between two bowls.

Spoon the scrambled eggs over the beans in each bowl. Add avocado and salsa on top, and season with salt and black pepper to taste.
