1 (1 pound) beef skirt steak

⅓ cup hoisin sauce

3 tablespoons Chinese vinegar (or sherry vinegar)

1 tablespoon soy sauce

2 teaspoons hot sauce

2 teaspoons sesame oil

1 tablespoon grated fresh ginger root

4 cloves garlic, finely minced

1 tablespoon packed brown sugar

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 green onion, light parts only, minced

Cooking Instructions
In a large bowl, combine hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, minced garlic, brown sugar, salt, and pepper. Whisk until well-blended.
Slice the skirt steak into approximately 4 or 5 smaller pieces. Add the steak to the marinade, tossing it to ensure each piece is well-coated. Cover with plastic wrap and refrigerate for at least 2 hours, or up to 12 hours.
Place paper towels in a baking pan. Arrange the steak pieces on the towels and gently blot off any excess marinade.
Preheat your grill to high heat and lightly oil the grate to prevent sticking.
Place the marinated steak on the grill and cook for 4 to 5 minutes per side, aiming for medium-rare or medium doneness. Use an instant-read thermometer— the internal temperature should reach between 130°F and 135°F (54°C). Thinner cuts may cook faster. Remove the steak and let it rest on a warm plate for a few minutes.
Transfer the steak to a warm platter and pour any collected juices over the top. Garnish with sesame seeds and freshly sliced green onions.
